Strawberry Salad

So if you checked in yesterday you probably saw that we’ve been avoiding the kitchen quite a bit this week. With the insane summer heat and just off a week-long trip in Montana, we’ve been kind of taking it easy with our kitchen adventures and reverting back to some easy favorites. This Sweet and Tangy Strawberry Salad and I go way back. It was one of the first recipes I bookmarked when I made the goal to eat fresh, natural, and healthier.

I love this salad like its my job. It is quintessentially summer. Sweet, tangy, full of fresh greens and summer strawberries, what else needs to be said? Oh yeah, the recipe:

Ingredients:

1/4 cup apple cider vinegar
1/4 cup sugar
1/4 cup vegetable oil
1/4 teaspoon paprika
1 dash Worcestershire sauce
1 quart strawberries
4-6 cups arugula, chopped into bite size pieces (you could also use two hearts of Romaine lettuce)
slivered almonds (optional)

  1. In a bowl, mix the vinegar, sugar, oil, paprika, and Worcestershire sauce. Cover, and refrigerate at least 6 hours.
  2. In a bowl, toss the strawberries and arugula. Mix with the dressing just before serving.

Yes, it really is just that easy. Enjoy!

    Definitely something to eat year after year, I’m so happy you posted this. FINALLY, THE strawberry (spinach) salad for us. I snuck in some bocconcini and it worked beautifully. Thanks for sharing, I’d love to try more of your go to dinner ideas:)
