Meal Planning (3/8-3/14)

Another week, and somehow we are already halfway through March! It’s blowing my mind that Kaitlan will be 7 months old in a week. Her sixth month just flew by and I have a feeling 7 months will be no different. Sometimes I want her to slow down, but each week gets more exciting!

This will be another crazy week for us. I know, what’s new right? Neil is on call, we are now going to the gym separately on different days because the childcare schedule changed and it’s right into Kaitlan’s witching hour, and I have a seminar with THE Elisabeth Akinwale on Saturday with my friends at Jeff City CrossFit. So ridiculously excited. Oh, and it’s daylight savings time and we have NO idea how it’s going to affect sleep around here.

Our meals are super random this week, but it’s all stuff we’ve really just got a hankering for. The lo mein stir fry is seriously just amazing (and makes a huge batch) and Neil for whatever reason is craving a casserole. Friday night will probably just be a “wing it” night, and I’ve got a serious craving for wings, so that might be what we end up with.

Roughly $50, with ingredients for lunches, breakfasts, etc.

Pizza Date Night

We are slowly increasing the amount of food Kaitlan eats during the week to see if it changes her 10 oz. overnight milk habit. Seriously, the kid tanks two bottles in the middle of the night! I have a bunch of stuff prepped for her including carrots, peas, mashed red potatoes and some sweet potatoes, in addition to the normal stuff (applesauce and bananas). We’ll see if this helps.

Over the weekend we made a huge batch of broth that I’m going to start putting in her veggies for added nutrition. We’re going to see how that goes over, and then start adding meat to her diet for the zinc and protein I know she needs. We haven’t done any type of cereal thus far, but I’m not above adding it. Maybe some oatmeal too? I’m seriously NOT an expert, just feeling things out based on how she’s doing — which is apparently HANGRY all the time.

    I want to know how you adapt that casserole to be buffalo chicken! Looks good as is, but sounds better with buffalo.
