Oatmeal Cookies

If you’re as busy and on-the-go as Neil and I, you crave nothing more on the weekends than to spend as much time possible at home. Our home is truly our sanctuary and by Sunday, we’ve entered some kind of euphoria. Our house is clean, and we’ve gardened, cooked, done a few projects and re-purposed ourselves to tackle the next week with optimism. Lately I’ve also taken to baking on Sunday as a way to ease back into the week. It’s nice having a treat. Something fresh and comforting waiting on the counter for us to get home and last week I baked these amazing oatmeal cookies that didn’t even
see Tuesday. Soft and chewy with over-sized soft raisins and a hint of chocolate, Neil emitted a “hmmmm” nearly every time he ate one. I think that’s a win.

INGREDIENTS:

  • 1 cup + 2 tbsp wheat flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup raisins
  • 1/2 cup chocolate chips
  • 10 tbsp butter
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

DIRECTIONS:

1. Preheat the oven to 350 degrees.

2. In a bowl, whisk together these dry ingredients (flour, cinnamon, baking powder, baking soda, and salt). In a separate bowl, mix raisins, chocolate chips and oats.

3. In a mixer or with one, beat butter until fluffy. Stir in brown sugar and continue beating. Fold in egg and vanilla and beat until thoroughly mixed. Turn the mixer to low, and add the dry ingredients. Then add oats mixture and continue to beat on low until all ingredients are thoroughly mixed and distributed.

4. Divide dough into 24 portions, creating loosely formed balls or 1-inch thick formed cookies. Bake for 12 minutes on a greased cookie sheet or non-stick pan. Allow to cool for several minutes before removing.

So these have butter, and more butter than most of the things I bake, but that’s why they’re a “Sunday king of cookie.” They are something special and should be savored with a smile. They taste amazing with milk, and never get hard and crunchy like those other oatmeal cookies. They’re delightful outdoors, on a picnic or just in the kitchen over the sink while no one is looking. They even go great with music.
