I woke up bright and early Monday morning and got ready while Neil enjoyed some extra sleep. I met the other girls downstairs and our guide Brenda took across the street to Marketing Werks for orientation. Being from a little midwest town, being on the 24th floor was definitely a “woo” moment.

We were brought into a conference room where we settled into and partook of the lovely breakfast spread they had set up for us. Believe it or not, this was my first time having Nutella! I feel so silly, but apparently it was only Emily’s second time, so at least I don’t feel like I’ve been under a rock. Now to sneak a jar home without Neil noticing…

After a brief introduction through the program specifics, it was the moment we’d all been waiting for, device time! Many of us had correctly guessed that we’d be receiving the Motorola Droid Razr HD, but were totally surprised when we were also given a Fitbit!

I’d done a little snooping on these products while trying to guess what we were going to be given, so I was really excited. While I already have a Droid (a six-month old Samsung Galaxy S III), the latest Droid devices have even more comfort features and longer battery lives, which has been my biggest complaint about my Galaxy.

The reps from Verizon and Motorola were super helpful in getting us all set up and suggested a lot of great apps to try. I’m pretty minimalist as far as apps go, but I definitely want to review a few for you all, and maybe try some new workouts as a result. I’ll definitely share more of an initial report next week once I’ve had a little more time to play with the phone.

Our guides Brenda and Kristen were absolutely fantastic. The second part of the meeting was an overview of the program. As I mentioned in my last post, I was stunned to be chosen, so it was cool to hear more about the selection process and why we were chosen. It was also great getting to know the blogs and niches of my fellow bloggers — all from the Midwest. Represent!

As the sole CrossFitter of the group, I’m excited to give my own unique perspective on not only these devices, but the state of tech for CrossFitters in general. Well, to the best of my ability that is. While I think we typically espouse a more minimalist approach to fitness (ie no machines), I think it often goes unsaid the many ways we use tech to enhance, track and document our fitness. And as I’m more than a little tech crazy, you’ll definitely see plenty of other thoughts on these devices for daily living as well. Above all, as I’m pretty new to this ambassadorship stuff, know that you’re getting 100% of mine (and Neil’s) honest opinions. We deal with a wide range of technology every day, and we have few loyalties and many opinions.

We closed the session out with lunch from Hannah’s Pretzel! Loved my pretzel roll and salad! Neil and I definitely lamented having to leave without getting to visit more restaurants. A return trip is definitely necessary.

I met up with Neil back at the hotel and filled him in on the program and devices. I think he was even more excited than I was. We used the new phone right away to find a restaurant on the way out-of-town. We’ve been wanting to try dim sum forever (we don’t have it here in Columbia) so we used the Voice Search and were able to find The Phoenix, which was only a few miles away in Chinatown and rated really well.

The dim sum was fabulous. We had pot stickers, spring rolls, chicken feet, tripe and chiu chow dumplings. The hot tea served with our meal was amazing.

Then it was back on the road and bound for home! Many thanks to Verizon for the awesome trip and the great devices to play with for the next six months!

Weekend?

So as you might have guessed by on the lateness of my post, my weekend was all work. Ridiculously all work. I’ve had two huge projects at work that have coincided in every major developmental milestone, culminating in a major deadline on the same day, Monday. So, it was a long, mostly uneventful weekend, but some cool things still happened. As you can see above, we tried a few new beers and ciders, as well as some old favorites. The Angry Orchard is amazing!

We also made a new chili. Obviously not Paleo, we got the recipe from Neil’s best friend Crash. It is simply 1 pound ground pork, 1 packet spicy taco seasoning, 1 packet spicy ranch dry dressing, 1 can each of kernel corn, black beans, pinto beans, and dark red kidney beans (leave the corn and bean cans undrained), and 1 can of diced tomatoes drained, 2 cups water. Brown meat and drain, mix all ingredients in big pot, bring to boil, simmer for 25-30 mins, done. Or you can go low and slow in the crock pot. Toppings like cheese, Greek yogurt, etc are optional. We splurged with a little smoked Gouda and it was ahh-mazing. Not too many days left for chili, or so we all hope.

Speaking of wings, we made those too. These were Asian themed, and nice and spicy. So good, they were gone in no time. These are becoming a pretty fast and easy go-to Paleo meal for us on the weekdays.

The sauce didn’t come from this book, but I just had to share it. We got it a month or so ago and it’s really recharged our creativity. It’s easy to get into a Paleo lull and eat some of the same things over and over again, but there are tons of great ideas in here. I’m especially excited by the goddess dressing. Mark Sisson’s books are so good.

But the best part? My parents took us out to dinner for me and my brother’s girlfriend’s birthdays (hers was February 17), and gave us each a beautiful orchid. I am thrilled, I’ve always wanted one, but have always been too afraid to take one on. My mom insists they are easy, so we’ll see. I know Madi will do great with hers, and knowing my luck, mine will die before the month is out. Nothing says “hey I’m responsible enough for parenthood” like killing a houseplant. Sigh. Let’s just remember it how it is right now — happy and unaware of its fate.

So, not a bad weekend considering I worked most of it. I finished everything on my to-do list! Now to get through this week. At least the CrossFit Open is finally here. Are you ready? Watch my progress here.

After our Cashew Chicken treat this past weekend, we’ve been on a bit of an Asian kick. I love coming up with ways to Paleo-ify (is that a word?) our take-out favorites. So often they are overly breaded, fried and salt and sugar-laden, so it’s fun to come up with ways to achieve the flavor without all the filler. While I will freely admit that there is no perfect substitute for legit take-out in all its saucy glory, This definitely hit the spot.

Adapted from Twenty-something Misadventures

Ingredients:

3 cups fresh pineapple, chopped, (finely chop 1 cup) – you can use canned, but it’s so much better fresh
3/4 cup apple cider vinegar
1/8 cup tomato, in one piece
1/4 teaspoon freshly grated ginger
1/4 teaspoon Braggs liquid aminos
2 tablespoons coconut sugar
Arrowroot powder to thicken sauce to desired consistency
2 chicken breasts
1 teaspoon coconut oil
1 large green Bell Pepper, chopped
1/2 onion, sliced into bite-sized pieces

Directions:

  1. Add cup of finely chopped pineapple, apple cider vinegar, soy sauce and coconut sugar to a medium sauce pan and bring heat to a simmer and stir until thoroughly blended. Add ginger and tomato. Bring mixture to a boil and cook until sauce begins to thicken. Reduce heat and remove tomato. Mix arrowroot powder with a tablespoon or two of cold water and slowly add to the sauce until it reaches the desired consistency/thickness.
  2. In a large skillet, add coconut oil and chicken and cook over medium-high heat until chicken is cooked trough. Add onion, pineapple and green pepper and continue stirring until green pepper begins to soften.
  3. Pour sauce evenly over chicken and vegetables. Stir until thoroughly blended and continue simmering for a few minutes, adding additional arrowroot if desired to thicken.

Makes 4 servings.

Sweet. Sour. Winning. It’s hard not to miss the breading on the chicken, but the flavors are so fresh it almost makes up for it. Neil and I have often said in this journey that it’s amazing how much more flavor exists when you subtract bread and cheese from any recipe.
