Friday Link-up and Loving Lately

Happy Friday! I am SO excited for this weekend. There is so much going on, but it feels like there’s still some downtime to enjoy. The weather is supposed to be AMAZING this weekend. We’re contemplating a walk downtown for lunch. It feels like spring *could be* just around the corner, but I know we still have a ways to go. February is always full of surprises.

One of our big goals this weekend is to re-introduce some dairy into KK’s diet. We wanted to give her plenty of time to recover from her stomach bug two weeks ago, but since being on almond milk her appetite is through the roof. She is eating constantly, and while that’s definitely not a bad thing, I definitely think some dairy products (read: more fat) would help her stay full a little longer. Our goal is to find a balance of a little less milk and more food.

Kimchi Braised Chicken with Bacon

Last night we tried this amazing (albeit altered for Whole30) recipe for Kimchi Braised Chicken with Bacon from this month’s Bon Appetit. I get this magazine every month and while I typically don’t have time to make the recipes, this one looked do-able. I, of course entertained Kaitlan while Neil did the cooking, but it didn’t seem too complicated. Kaitlan even enjoyed kimchi for the first time!

Wreck-It Ralph

Yes, the Disney movie. Kaitlan has a finite selection of shows/movies she likes, and I’m so thankful that Wreck-It Ralph is one of them. I never really had a favorite Disney movie, and this one is definitely it now. I love the moral/message and all the dorky video game humor. The Laffy Taffy scene is definitely my favorite.

The Kara Gillian Series

I’m in a little bit of a series kick right now with books (see the next Loving Lately item for confirmation). I started reading the Kara Gillian Series by Diana Rowland like 3 years ago and have been slowly keeping up (binge reading 2-3) as she adds more.

The Lunar Chronicles Series

While I’m catching up on the Kara Giliian Series, I also got myself a bit hooked on the Lunar Chronicles Series by Marissa Meyer. I just bought the third book (Cress) and know I’ll get hooked on all the back story editions too. Needless to say, I’ve been staying up way too late at night…

Crockpot Breakfasts

With our Whole30 Nutrition Challenge has come the revelation that making breakfast in the crockpot on SUNDAY is awesome. Since one of my “exceptions” for the hybrid version of the challenge was rice, I’ve been making this awesome rice pudding (adapted), and it keeps so well for the week’s breakfasts. Thinking that between it and oatmeal, I may have formed a new habit! Have any crockpot breakfast ideas for me?

Nikki Metzger and Derek Weida = Ab death

I’m not one for a ton of isolation workouts, but these Nikki and Derek both have ab workouts that are INTENSIVE if you have like 20 minutes and a high pain tolerance. Derek’s can be found on Facebook, and Nikki’s is part of her new workout DVD from Women’s Health Magazine called Ignite (just got it this week!) Since I know a lot of you are looking for those types of quick and dirty workouts, I thought I’d share them! I also put one of Derek’s vids up below, because he reminds me so much of a few of the people I’m blessed to know through CrossFit.
