Meal Planning (4/26-5/2)

Not to brag, but we did absolutely awesome last week as far as meals and menu planning go. One whole chicken and about 3 lbs of chicken breast got us through the week and into the weekend. Seriously! And we only ate out once for lunch. I did one little mid-week stock up on bananas and coffee, but that was it!

On Saturday we made a little trip to the Farmer’s Market and picked up ingredients for a bruschetta and then finished it off with some sides (mac and cheese, completely random) from Lucky’s that we got when we did our grocery shopping for the week. So not pizza like usual, but YUM! The first garden tomatoes after a winter of tasteless grocery store ones are always the best.

This week we have the “usual” after-hours installs and client work stacked up at the beginning of the week, but nothing we can’t handle.

Roughly $60 so far, with ingredients for lunches, breakfasts, etc. and some fun stuff like drinks and snacks. The pork spare ribs were on sale at Lucky’s this week so we ended up with over 4 lbs.

This week we added Greek yogurt to the mix. After eating it almost every day of pregnancy, this if the first time I’ve had it since Beeb was born. And she loves it as much as I do. We’ve been swirling it with a little fruit/applesauce and I think it tastes like dessert to her.

Her meals this week are from our batch cook last week. She’s up to 2 cubes of meat per day at daycare, and eating more banana and some Cheerios in the morning for breakfast. I can’t believe how easy feeding her is. She’s starting to eat pieces of our meals when we eat. Still likes to be fed, but is more willing to investigate the whole shebang on her own. She’s also taken to feeding herself with the bottle if you hand it to her and turn around/walk away. I learned this after turning around for a minute to wash a dish. Sneaky baby!
