Dinner Last Night: Paleo Sweet and Spicy Pork Loin

First, thanks for your patience with our downtime over the past two days. Our host had a hardware issue and got it back up and running last night. I never think I’m that attached to our little blog until it’s down. My poor host is a saint.

While I’m playing catch-up with our weekend happenings, I thought I’d share dinner from last night. Neil made a boneless pork loin rubbed with an awesome sweet and spicy rub. It was super simple, but tasted so good, I had to share the rub with you.

Ingredients:

4 tablespoons coconut sugar
1 tablespoon salt
2 teaspoons cracked pepper
1 tablespoon paprika
1 tablespoon chile con carne spice
1-2 pounds boneless pork loin

Directions:

  1. Mix spices and rub over meat. Refrigerate loin in covered container for 24 hours.
  2. Preheat oven to 350 degrees F. Place loin into a lightly oiled glass baking dish and into oven. Bake for 25-30 minutes per pound of meat or until a meat thermometer inserted into thickest portion registers 145°. Let stand 15 minutes before slicing.

Super easy right? We served it sliced over a bed of carmelized onions and peppers. Yum! What are you eating for dinner tonight?

That looks awesome. I don’t think I’ve ever seen coconut sugar– where do you find it?
