I MADE DESSERT! Sorry, it’s just so rare these days, I feel like I have to break out the caps lock — and the strong tags. I stopped myself at italics.

My mom and I are in the early stages of Christmas baking planning. I know. It feels so early, but with my travel schedule in November, the holidays feel like they are right around the corner. My mom literally has thousands upon thousands of recipes saved in binders so the possibilities feel endless. While Christmas always feels like the cookie holiday, I think a few bars might be nice too, and these might be just the ticket.

This was my first time making the ever-popular Hello Dolly bar, but they were an easy bar I decided to throw together for a somewhat last-minute Halloween party two weekends ago. I found the recipe in one of my mom’s collections, and I have no idea where it came from. To make it somewhat healthier, I opted to swap a few ingredients. Butterscotch chips were replaced with dried cherries and regular graham crackers were replaced with gluten-free grahams. I also cut a little bit of the butter out, it just seemed a bit excessive. I also used PLENTY of diced apples, more than I think the recipe called for.

Ingredients:

2 cups gluten-free graham cracker crumbs
1/2 cup butter, melted
12-oz dark chocolate, chopped (you can also use dark chocolate morsels)
2 1/2 cups dried cherries
1 cup sweetened flake coconut
2 1/2 cups peeled and finely chopped Granny Smith apples (about 1 lb)
1 1/2 coarsely chopped pecans
1 (14-oz.) can sweetened condensed milk (we used Eagle Brand® which is GF)

Directions:

  1. Preheat the oven to 350 F. Stir together graham cracker crumbs and butter, and press into a lightly greased 12-x9-inch pan (I greased with coconut oil). Layer with chocolate and the next 4 ingredients (in order of list) in prepared pan; drizzle with sweetened condensed milk.
  2. Bake at 350 F for 40-45 minutes or until deep golden brown. Cool completely on a wire rack (about 1 hour), slice into bars.

That sweetened condensed milk is no joke. I’m not a baker, so I don’t have tons of experience with it, but it sure goes a long way. I got worried about halfway through the can that there was a typo in the recipe. It really coated everything thoroughly.

My only mistake was not cooling them completely on the rack. We were in a hurry, and I literally pulled them out of the oven as we were backing out of the driveway. As a result, they didn’t stay together as much as I would have liked, but I think people enjoyed them anyway. Lesson learned. They are nice and sweet without being too rich, which are the types of desserts I make often because Neil and his family aren’t huge fans of sweets.

My goal is to eventually achieve a Paleo variation, and I think the key lies in finding the right substitute for the graham cracker. We’ll see. And for parting entertainment, here’s a photo of Matilda enjoying a leftover apple.

So lazy, so good

We kind of dorked out this weekend. Lots of lazy gaming, good cheat eats and movie watching. It’s the last weekend I’m in town for nearly a month, so I felt like doing absolutely nothing. I didn’t even do my long run and I totally missed the yoga class I wanted to go to. We also entirely avoided Mizzou Homecoming this year — slept right through most of the festivities. Lazy!

Neil requested his favorite baked corn dogs as his cheat meal, so that was one of our few productive moments of the weekend. They aren’t all that hard to make, actually pretty fun…

We also enjoyed another pumpkin ale, the O’Fallon. Very tasty.

So that was our weekend. We were supposed to carve our pumpkins last night, but even that didn’t happen, oops! Guess we’ll have to do it tonight.

This week, behind the scenes, I’ve been working on a series of posts about our first year of being mostly Paleo and doing CrossFit. I deluded myself into thinking I could be one of those bloggers who can churn out posts daily effortlessly, and that I would have them finished and posted in less than a day. WRONG! With work projects and training this week, time of course has just flown by and here we are at Thursday. The posts themselves have been a lot more complicated to write than I thought. There’s just so much to say, and finding the best way to assemble and present so many thoughts and observations is difficult. That or I’m just a much more terrible writer than I thought. I guess I’ll let you all decide.

So for now, while I give myself a little break and, I thought I’d try to entertain you with a few of the random happenings going on over here.

A storm is rolling in. My friends in KC said temperatures dropped from 71 to 49 degrees in 15 minutes! And my coworker in MN has snow! I’m in shorts and slippers, prepared for anything at this point. Last night I could barely work in our loft because it was too hot, and not I feel like I need a heated blanket and a sweater.

Neil convinced me to leave Matilda uncrated for the first time yesterday while we grabbed lunch. I was so nervous. Would I come home to wrecked house? Scratched doors? Food wrappers? Clive hasn’t exactly been a good home alone role model. But I came back and found her like this. Such a good girl!

Neil bought our pumpkins this past weekend. I’m so excited to carve them this weekend. I always wait till the very last-minute because they always get mushy so fast and I like them to look good on Halloween. Neil said these two had good “face potential,” whatever that means…

I impulse-bought chalkboard paint and brushes last week. Have you ever just impulsively bought craft supplies? Surely I can find a use for this…

Speaking of crafts, I have a whole box of vintage blue jars from my grandparents estate that I want to do something cool with. Any ideas? Pinterest wasn’t a big help on this one…

Neil just started one of the books he got (from me) for his birthday, and I’m excited to see what he thinks of it. As I just finished a Hitchens book myself, I know he often goes a little overboard on details. I know I don’t talk religion a lot here, and I won’t lie, I still get squeamish on the topic, or in our case, the lack thereof. But I know that there are a lot of us out there, especially here in the Bible Belt and I don’t feel like we should have to whisper or hide or pretend there is something wrong with us. There’s your overdramatic soapbox moment for this post…

I on the other hand, have finally discovered Caitlan Moran, and I absolutely love her. ‘How to be a Woman might be my favorite book this year. Although I don’t think I’m on board with consuming my own menstruation, that might be asking a little too much.

And finally, this box just sitting in our extra room contains the jar I bought to make kombucha — 5 months ago. I don’t know what I’m so afraid of. I love the stuff, but the whole “mother” thing is totally grossing me out. Have you ever chickened out on a DIY foodie project? I really don’t want to, hopefully I can get over this.
