First of all, how awesome of a last name is ‘Skibinski’? I don’t know why, but every time I hear it I think of the Szalinski family in ‘Honey I Shrunk the Kids’.

As I mentioned in yesterday’s post, one of our trainers, Eric, is leaving to enter the Navy Seals in two weeks. It’s a huge accomplishment that he’s worked very hard for, and while we’re proud, we’re really going to miss him like crazy. He really took Neil and I under his wing when we first started, and his patience with my then athletic inexperience is nothing short of stunning, especially for someone who is only 20 years old. He is so mature and wise beyond years, I still have a hard time believing he’s that young. I hope the Navy realizes what an asset they are getting.

We started the day with a WOD. Because so many people turned out to say goodbye, we did a team workout, with teams of 4 or 5. Because I’ve always been in charge of food or recovering from another event, this was my first team workout.

Workout (25-minute cap):

400 burpees
125 clean and jerks
200m run
Rest

Essentially, each member of the team did an exercise as a station. The determining factor of how fast each round was whoever was running the 200 meters. Whenever the runner returned, it was time to switch. In workouts like these, there is always strategy. My team chose to play to the strengths of each member. For instance, when it was my turn to do burpees, the runner knew to take their time, because I could bust them out, whereas with clean and jerks, we leaned more on the guys with better upper body strength. Lunch was a fare of mostly Paleo goodies. We made a Curry Steak that we paired with guacamole in a lettuce wrap (I’ll make it again and take better pics). There was also a slew of slaw, sweet potato salad, fruit, burgers and for dessert, an oat and fruit bar (gluten-free) and Paleo bacon chocolate chip cookies.

We spent the rest of the night on the couch glued to the Olympics and fighting the pets for a spot. What a great weekend!

Ah, how is it already Friday!? I feel like this week went so fast! Maybe it’s because we’re fresh off a vacation? We need more of those if that’s the case.

We’ve suffered from major kitchen avoidance this week. With triple-digit temperatures nearly all week (Wednesday was nearly being 107 degrees!), it feels impossible to do just about anything comfortably, even just sit still. We’ve managed to keep up with our goal of working out at least 4 times a week, but it has been tough. I even nearly passed out while running during our workout on Monday. We were doing 200m sprints between rounds of cleans, kettlebell swings and front squats. Despite drinking a lot of water and keeping myself as cool as possible, I just got too dizzy. It was brutal. Running on the pavement felt like being cooked on a stove. My eyeballs were even hot, how does that happen?

So, in our avoidance, the crock pot has gotten a bit of a workout too. We put together a big crock of Thai pork with almond sauce, and it’s managed to hold us over with a variety of meals for the entire week. It’s juicy and sweet and perfect with steamed veggies or wrapped up in big pieces of lettuce. You can of course serve it over steamed rice too if that’s your game.

Ingredients:

One 2-pound boneless pork loin, trimmed of fat and cut into 4 pieces
2 large bell peppers, seeded and cut into strips (any color)
4 tablespoons coconut sugar
1 tablespoon lime juice
1/4 cup Braggs Liquid Aminos
2 tablespoons rice vinegar
1 teaspoon red pepper flakes
2 cloves garlic, minced
1/4 cup almond butter (peanut butter obviously works too)

For serving:
1/2 cup chopped green onions (white and green parts)
1/4 cup chopped dry roasted peanuts
2 limes, cut into wedges

Directions:

  1. Coat the slow cooker with coconut or olive oil. Put the pork, bell peppers, red pepper flakes and garlic in the cooker. Combine coconut sugar, lime juice, Braggs Liquid Aminos, and rice vinegar, stir, and add to cooker. Cover and cook on low until pork is fork-tender, 8 to 9 hours.
  2. Remove the pork from the cooker and coarsely chop. Add the almond butter to the liquid in the cooker; stir well to dissolve and blend with the liquid to make the sauce. Return the pork to the sauce and toss to coat the meat evenly.
  3. Serve over veggies, lettuce wraps or jasmine rice and sprinkle with green onions and peanuts and a squeeze of lime juice from the wedges.

Makes 4-6 servings.

Today is our three-year wedding anniversary. It’s cliché I know, but really, where does the time go? I was doing some blog work the other night, fixing some posts with broken picture links, and one of the posts was our honeymoon recap. How far we’ve come since then, and wow, how different we look! I love it. I’m so proud and grateful of where we are and where we’re going and how much fun we’re having along the way. Few people can say they achieve full belly laughs before 9 AM. We’ve really come so far.

Last year I recounted some of our observations, and this year I thought write a few more.

Create a sanctuary: Curating privacy has been valuable for us. Since buying our house, we’ve cultivated it into a mostly private space. While you see some parts, others will remain just ours. It’s our sanctuary. On that note, we’ve also found ourselves pulling back from sharing everything online as well. While that might seem backwards for a blogger, it just feels better. Maybe that’s creating a ceiling for our success (as bloggers anyway), but what’s more important?

Reward yourselves: I think one of the biggest mistakes we made early on, with the best intentions and mostly out of necessity, was to be too tight with money. Far too often, I think we expected the worst or we felt too guilty about enjoying some of the fruits of our labor. You can save for a rainy day, but sometimes, you can also enjoy the sunshine.

Change your plans: One of the best books I’ve read this year is Rework by 37 Signals. While it is specifically tailored to business, it offers a lot of advice that I think can be adapted to many other areas, especially relationships. I especially liked this bit:

You have to be able to improvise. You have to be able to pick up opportunities that come along. Sometimes you need to say, “we’re going in a new direction because that’s what makes sense today.”

Make goals, but don’t obsess or compare your progress to that of others, and above all, remain flexible.

It never hurts to adopt another rescue pup either.
