Here’s a little video I took of the WOD from last night. Optimally and ultimately I’d like to have Neil and I in different heats so we ourselves could be in the vids and not just filming our willing fellow CrossFitters. This week our box is focusing on strength (when are we not?), so our training doesn’t leave so much out of breath as it does with burning muscles.
We started with a simple PVC warm-up (pass-throughs, side-to-sides, straight-leg dead lifts, etc.) and moved onto Strength. We did:
5×5 Behind-Neck Strict Press (approx. 65% Max Press)
3x Max Chin-Ups
The WOD itself was a 5 minute AMRAP (“As Many Rounds As Possible”) of:
3 Power Cleans
6 F-Squat
9 P. Press
So how’d we do?
Jessica: 4+3 pp at 35 lbs
Neil: 2+5 pp at 95 lbs
It’s impossible not to go into CrossFit on a Monday feeling kind of pudgy and slow after a weekend off, but by the time I leave, I always feel on fire, and ready to plow through the week like gangbusters. In the past few weeks, I’ve seen a HUGE increase in my energy and motivation levels. I don’t know if its hormonal or from working out (it’s never happened before), but I’m definitely embracing it. After all, I’m turning 30 in a few weeks, and the less I can feel it, the better.
Has exercise ever given you a noticeable energy boost?
I don’t know what the weather is like where you are, but it is WARM here. Last night I went running in shorts and a light jacket. It feels like spring, which is crazy because exactly one year ago we were buried in a blizzard! Even crazier? It snowed on Friday when I planned this week’s menu (I’m back on the planning bandwagon), which at the time felt perfect for a hearty beef stew.
Trimming the roast took a fair bit of time, which quickly turned into entertainment for the ankle-biter squad. Tildy has wasted no time in being completely food-obsessed like her brothers:
They didn’t take their eyes off Neil the entire time. Oh and we can’t forget the other brother…
More than once we’ve had to get out of bed in the middle of the night to scare Felix from the counter. He remembers when we prep, and likes to check the counter for leftover goodies after we’ve gone to bed. He’s become a pretty bold little “crumb” snatcher in the past few months, even going so far as to steal a piece of pizza from my mother-in-law at my graduation party. Took off running with it! Such a turd.

Ingredients:
1 (3-pound) boneless chuck roast
2 tablespoons vegetable oil
1/3 cup all-purpose almond flour
2 medium yellow onion, medium dice
4 tablespoons tomato paste
8 medium celery stalks, medium dice
10 medium carrots, peeled and medium dice
1/2 pound cremini mushrooms, cleaned, stems trimmed, and quartered
2 cups frozen peas
2 medium garlic cloves, finely chopped
2 teaspoon dried thyme
2 tablespoons coarsely chopped fresh Italian parsley leaves
1 cup dry red wine
4 tablespoons Dijon mustard
2 teaspoons kosher salt, plus more as needed
1/2 teaspoon freshly ground black pepper, plus more as needed
1 1/2 cups low-sodium beef broth
1 bay leaf
Directions:
Coat the beef in the flour. Heat a few tablespoons of the oil in a large skillet over medium-high heat. Brown the meat, a few pieces at a time, adding more oil as necessary. Transfer to a 4- to 6-quart slow cooker.
Add the onions to the skillet and cook over medium heat until tender, about 10 minutes. Stir in the tomato paste and coat the onions; transfer to the cooker.
Pour the wine into the skillet and scrape up any browned bits; add to the cooker. Stir in rest of the ingredients.
Cover and cook on low heat for 7 1/2 hours, or on high for 4 hours.
Makes 4-6 servings.
This soup has such a rich flavor! We’d take the credit but really, it was the crock pot. She (yes our crock is a “she”) does all the work for us. There’s nothing better than walking upstairs from the garage to the smell of dinner already waiting. Plus, with the hassle of prep done Sunday night, I was able to eek out a run with the dogs before dinner. Just a little 1.5 miler, but still.
Note: We stuffed our soup to the gills with veggies, so feel free to scrutinize our proportions and lessen where you feel necessary.
Is it just me or did this weekend just fly by? I’m so not ready for work tomorrow. I feel like weeks in January and February take forever, but the weekends feel like mere hours long. It’s so unfair! At least we’ve all but tied up January, and albeit short, this weekend was pretty productive. Here’s what we managed to cross off:
We did our taxes: Full of exciting surprise and consequent groans, we are excited that our business exploded in 2011, but not excited about giving it to “the man.” More about that soon!
We went live with out latest project: Our latest freelance baby is live and I can’t wait to wait for the official launch of Hoosier Homemade’s redesign. She creates beautiful food and DIY projects, so definitely give her great content and new look a …look!
We met with our next client — and had dinner! Since most of our clients live out-of-state, we’re excited to work with some friends of ours who live right here in Columbia. We met for dinner on Friday at one of our favorite restaurants and discussed all the details. Excited to start this week!
We played computer games: Hey, fun is important too!
We bought a collar. And added to our family.
Okay, I won’t leave you hanging on #5. Two weeks ago, we came across an ad for a Boston Terrier. An adorable, pudgy little girl who needed a new home. We’ve been considering a second dog for nearly a year, so after we sopped up our melted hearts, we brought her home for a two-week “trial” visit. By the fourth day, we were a four-pet family.
Matilda or “Tilda” has quickly become Clive’s best friend. They go everywhere together, delight in tearing up and down the hallway, and currently as I type this, are spooning under a blanket under my arm. Even the cats like her. It’s as if she knew exactly what we were missing.
So we donated money to the rescue, and picked out a bright pink collar with a paisley pattern. I’m not normally for pink, but it suits her, she’s definitely a bright little light in our otherwise cold, grey January.
