We had a blast at my cousin’s wedding in Minnesota this weekend. It’s always an awesome time seeing my family. Throughout all the changes, the moves, and distance, they are a constant and an amazing support system to both Neil and I.

The weather this weekend however, was the complete opposite. I’ve never been under the threat of tornadoes for so long in my entire life! We arrived in Rochester and the sky was all sorts of green and purple and the lightning was right out of a movie. We decided to hit up a restaurant near our hotel in case we had to duck for cover or race back, so we hit up John Hardy’s BBQ. I’m not usually one for barbecue, but Neil is, so we decided to give it a try. We each ordered ribs and fries and were blown away by the plate of food we got. The portions were HUGE! I’ve only had ribs once, so I figured they’d be around 5 inches or so but each rib was over 8 inches long! Picture that with a bed of fries beneath and I was stuffed in no time. Who can eat like that? Needless to say we both took doggie bags, and I gave mine to the night desk guy at the hotel.

We survived the storms the first night and awoke to more warnings the next morning. We made our way to the wedding, and the sun graced us for a bit. My uncle owns a  beautiful nursery, and the place was fully decked out for the wedding. Gorgeous flowers, fountains, and archways, perfect place to have a wedding (though he insisted it will never happen again).

It was a gorgeous wedding. The flowers, the food, the open bar, the music, the open bar – did I say that already? It was all completely amazing. We laughed and danced and drank more than we should have…

…then Neil brought me his iphone.

The weather app showed red all over the radar. At almost that second the wind started whipping through the tent. We hurried and tied down all the sides. We were thinking that it was merely just a thunderstorm and that we’d just continue dancing in the tent, but Neil wasn’t convinced and went to get the car. While I was waiting, two police officers ran in from either side of the tent, screaming for everyone to evacuate and find shelter. Tornadoes had been spotted west of town moving east. The sirens started going off, and then it was mass chaos. I quickly hugged a few family members and everyone just grabbed what they could and ran with who they could to find the nearest shelter.

Okay, so I was scared. I was screaming and crying in the car. I’m terrified of storms. I’ve never seen a tornado and nothing terrifies me more than a tornado at night and not being able to see it. Remember that scene in Twister? The tornado comes out of nowhere and swallows the drive-in movie theatre! We even ended up hiding in a gas station just like in the movie! EEP! After 30 minutes we started back to the hotel, following the storm all the way to Rochester.

We left the next morning under more severe weather warnings, and essentially drove through it all day. At one point, we even had to pull over, with about ten other cars, because the rain was going sideways and no one could see! I was so happy by the time we drove down my street, and opened the door to home. It was a beautiful wedding though, and I’m so glad we were able to be a part of it.

Homemade Pretzels and Beer Dip

As we were on our whirlwind trip to MN this past weekend for my cousin’s wedding, Neil was glued to his iPhone keeping track of all the latest Word Cup scores. As many of you know, the U.S. team was painfully eliminated by Ghana, but that wasn’t the game Neil wanted to see most. He was on pins and needles for the Germany vs. England game. He’s a huge Germany fan and was ecstatic when they beat England 4-1. To celebrate their win, last night we made homemade pretzels and cream cheese beer dip and it was fabulous!

Ingredients:

¾ cup warm water
1 tablespoon sugar
1 teaspoon kosher salt
1 ¼ teaspoon active dry yeast
2 ½ cups bread flour (if you want to incorporate whole-wheat, change proportion to 1 ¾ bread flour + ¾ cup whole-wheat flour)
2 tablespoons margin, melted
2 teaspoons oregano or basil (or both)

For the Cream Cheese Beer Dip:
2 packages (8 ounces each) light cream cheese, softened
1/3 cup beer or non-alcoholic beer
1 envelope ranch salad dressing mix
2 cups (8 ounces) shredded cheddar cheese

You’ll also need:
Olive or vegetable oil
10 cups water
2/3 cup baking soda
Kosher or pretzel salt
1 egg yolk

Directions:

1. Combine yeast with water and sugar and allow to proof for five minutes. Stir together flour, salt and margarine and slowly pour in yeast/water sugar. Mix in a stand mixer using a dough hook until the dough is smooth and elastic.

2. Place the dough in a bowl with oil in the bottom and cover with a damp towel or plastic wrap. Allow to rise until its size doubles, roughly 50-55 minutes.

3. Preheat oven to 450 degrees F. Bring water and baking soda to a boil in large pot and line a baking sheet with silicone mat or parchment paper. Punch out dough and divide into six pieces. Oil your hands and roll each section into a rope that is approximately 16 inches long. Make a letter “U” and cross each of the two ends over one another to make the pretzel shape, or make any shape you want.

4. One at a time, gently place pretzels in the boiling water for 30 seconds. Remove and place on the lined baking sheet. Combine the egg yolk with one teaspoon of water and add the oregano/basil. Brush the yolk onto the pretzels and top with a sprinkling of kosher or pretzel salt. (now would be the time to add cinnamon or sugar if you want more of a sweet pretzel). Bake in the oven for 12-14 minutes, then cool pretzels on a wire rack.

To make the Cream Cheese Beer Dip, beat together cream cheese, beer, and ranch dressing mix until smooth. Stir in cheese. Refrigerate before serving with pretzels. Note: If you get a little heavy-handed with the beer, as Neil did, add a little flour to thicken.

I have as much confidence as any person when it comes to my cooking. I’ve had my share of successes and blunders, but these were so good, I was actually surprised. These were quite possibly (if not definitely) the best pretzels I’ve ever had. They were soft and a little salty. They were a little chewy without being tough and gamy. They were just awesome, and Neil is already insisting that I make them again this weekend for the 4th of July BBQ. He wants to using the dough and making pretzel dogs. Could be interesting eh? In any sense, give these pretzels a try, they are too easy and too good not to.

Came home to find these little guys hiding in the tomato plants. Can’t wait to can and eat tomatoes till we’re…RED! As you can see, we also have a little spot on our plants. Will we ever catch a break with this weather?
