December 2009

I’m not a pessimist. A lot of amazing and wonderful things happened this decade, but overall, I’m glad to be through it and excited because the next decade holds not only a lot of promise, but a lot of big changes and momentum in our lives.

A few of the great memories from 2009:


February 2009: 100 Acre-Wood Rally near Salem, MO. It was freeeeeezing but definately one of my best memories of the decade as a whole. We thought google directions were the most reliable to get us to the different viewing areas, and they were…because we ended up on the course!

April 2009: Neil returned to PDX and performed better than ever!

May 2009: We moved into our new-to-us house! Our first home as a married couple, and the place of many firsts. It’s our sanctuary and I couldn’t imagine living anywhere else for the time being.

June 2009: Neil’s Bachelor Party. There are tales of infamy from that night and I’m only glad my husband-to-be escaped unscathed and disease free.

July 2009: My bachelorette. Never ever let your waiter from dinner (center) offer to take you around town. Never ever let him suggest a bar comprised of disco balls and mirrors where they serve shots called the “bear f*%$&#” after you’ve spent all afternoon downing beer and the five bottles of champagne your bff brought to the hotel room. Never ever let any of this happen unless you want to have one of the most awesomely memorable nights of your life.

July 25, 2009: We got married. I felt married to him from the moment we became a couple, but now everyone and the government knows.

August 2009: Our honeymoon in Colorado. Best trip of our lives so far. So peaceful, so quiet, so relaxed and I personally never thought myself capable of, which speaks a lot to Neil’s influence and support. I climbed real mountains, slept in campsites without full-service bathrooms and electrical hookups and only showered twice that whole week.

September 2009: The only thing better than our honeymoon was that we were able to return to Colorado a month later to watch these two lovebirds tie the knot and capture it with our new Nikon D90.

October 2009: Halloween in Springfield with the gang. Neil was Vince the Sham-Wow guy and I was Billy Mays, or as every other drunk ass exclaimed “look a hobo!” I was not a hobo, it’s just really hard for a girl to pull off that steel-jawed bearded face.

November 11, 2009: My grandma passed away. And although we miss her dearly and wish she was here every second of every day to guide our ships like she always did, we’re excited for the many things yet to come that we know she’ll still be watching.

November 25, 2009: Great Family Thanksgiving. Couldn’t ask for a better week or a better family.

December 2009: Our first married Christmas, spent snowed out of Minnesota and Iowa and stuck at home. We compensated well though.

Other highlights:

  • I turned 27 and Neil turned 28.
  • We had an awesome wedding and bridal shower.
  • We bought a lot of camping equipment.
  • I took up yoga, Neil is back into running and we love the gym.
  • We started our LLC and this blog and have met tons of new people we enjoy chatting with.
  • We grew our first garden and learned to can and preserve all the goodies.
  • Played lots of World of Warcraft!

So there you have it. A year full of events and constant preparation for the next step or the next event. I’m excited for 2010, there are lots of things we want to do and I won’t have to spend half my year worrying about one day. I want to thank you all for supporting us, and reading this blog and I hope to  keep making it worth your while. The aftermath of last year’s New Years Eve Party

We traditionally spend New Years Eve with friends at one of our homes. We’ve spent New Year’s at bars and large parties, but nothing compares to being in a comfortable home, off the roads, and eating good food and relaxing with generous quantities of alcohol. Because of the festive drinkage, our typical fare is most typically and enjoyably comfort foods. If it has bread, cheese, meat or can be dipped, bring it on over! Below are a few of the recipes we’ve enjoyed as well as a few we’re pondering for this year.

Traditions of present and past:

  • Spicy White Chicken Chili – Featured and mentioned on our blog many times, it’s actually the top reason people end up directed to our site from online searches. I don’t know whether to be proud or kind of sad at that, but for now hello to people searching for White Chicken Chili! It’s a staple winter party recipe. It’s super easy to make, it’s light but filling and we’ve found if we mention it when someone is talking about their party, we…or the chili always get an invite.
  • Glazed wings – No specific flavor, although I love love love Korean style {recipe via Steamy Kitchen} wings because they have a zingy citrus flavor and isn’t totally coated in a thick sauce. Our friend Blake brought these last year and they were a hit and a great compliment to the Spicy White Chicken Chili.
  • Bruschetta – Our roasted tomato bruschetta {recipe via bell’ alimento} is usually the first thing out of the oven when guests start arriving and the first thing we run out of. It’s super simple and easy and if you want to prepare the topping in advance it doesn’t hurt it at all.
  • Miniature Pigs in a Blanket – I’m going to suavely call this “retro” and not cheesy. If you don’t know how to make them email me. We make ours bit-sized appetizers using mini-weenies and sliced dough. If you want the truth, I often church it up with a bit of olive oil and seasoning spices.
  • Cheese Ball – The food, not the hosts. This is typically our friend Anja’s category. She doesn’t cook much, but always brings awesome cheese spreads to parties. Between her sister and I, I think we’ll soon be able to coax her into being a DIY Foodie with us.
  • Fudge – Blake’s girlfriend is a killer baker (don’t read that literally). All the things that never turn out for me, she makes beautifully almost effortlessly. Her sweets especially are the death of me. She makes awesome fudge, and once you’ve finished stuffing your face with meat and cheese, it’s blissful death with her dessert. Hopeful traditions in the food-lustful future:

Here are a few of the recipes we’ve been tossing around for this year. I don’t think attendees can fit that much more food in them, but there are a few I’d love to throw into rotation.

Cocktail Weenies

I know, not that original right? Anything that involves mini-weenies immediately transports me back to the 1960′s, even though I wasn’t even alive. But these are always a success with the boys and it was the first recipe that Neil piped up with when I asked for ideas.

I knew when the first ten photos of the post involved butter, eggs, cream cheese and cheese that it had to be from  Paula Deen or Ree Drummond @ The Pioneer Woman. This looks like that sneaky deceiving dish that your fellow party-goers will worship you for bringing but hate you for later when they are at the gym and it’s still  not coming off.

Spinach Mascarpone Dip

Oddly enough, in my several years of cooking for others, I’ve never made anything other than your standard seven-layer dip, so this looks fun less cumbersome, and can be disguised and passed off as a “healthy alternative.” I also like the idea of  Spicy Crab Dip and Cheese Pepperoni Pizza Dip (thanks for the tip Leslie!)

So there you have it. Yes, I’m not overly gourmet or Martha Stewart when it comes to cooking for parties. I cook what people like and what I know they’ll love to indulge in on a holiday. Comfort food doesn’t have to be overly complicated, and it’s nice to relax and just enjoy simple foods and great company. Tonight, I’ll be preparing these vittles and tomorrow is the last day of 2009. I still can’t believe its over already!

Our first Christmas as a married couple was quite eventful yet very relaxing. We were in definite need of a vacation, so much so that by mid-week we often forgot what time it was and even what day it was. What started as plans to visit my extended family in Minnesota, ended in being snowed out of the upper Midwest by a wallop of a blizzard that dumped over a foot of snow in parts of Minnesota and ice throughout Iowa. We watched the radar for four hours before canceling our trip and calling our family.

It goes without saying that we were hugely bummed not to be able to take the trip. We decided to cheer ourselves up by planning a Christmas feast with our own micro-assortment of all our favorite dishes and a new one to acquaint ourselves with. We picked up a lovely ham, asparagus, potatoes, and ingredients for pineapple casserole, something I saw once on TV and have always wanted to try.

We spent much of the week reading books, watching movies and playing World of Warcraft. On the afternoon before Christmas Eve, we received a call from my uncle saying that my cousin’s wife had given birth to her twins. They were due in February but decided to make an early Christmas appearance, ironically on the same day as the oldest great-grandchild in our family, Andrew. That means that half of my grandparent’s great-grandchildren have the same birthday. Very easy to remember.

On Christmas Eve we spent the evening at Paul and Donna Moessner’s hanging out with Donna, Anja and Steve. We had great food and endless conversation while waiting for the 11p.m. church service at St. Andrew’s (Paul serves as pastor there). It was our first time worshipping at a Lutheran Church, but it wasn’t all that different than attending a Catholic mass, and there was even more music. Donna gave us a beautiful ornament of the Nativity for our tree.

On Christmas Day we awoke to a very white Christmas. It was very beautiful but quickly dashed any travel plans so we decided to prepare our feast. Lovely baked ham, sour-cream mashed potatoes, asparagus in olive oil and pineapple casserole. Very traditional given the way we normally cook, but it’s a once-a-year affair.

Our entertainment

The story of behind our entertainment. Felix is obsessed with boxes. The day before this we were unable to successfully capture him trying to squeeze himself in a standard USPS mailing box. You know, the skinny ones that are a little longer than a shoe box. In this picture he is trying to squeeze himself into the Yoga Mat box, because Neil had him convinced there was something in there. And no inch of box can go unexplored in the world of Felix.

It was a great Christmas despite the change of plans. To me, a little piece of my heart is never fulfilled unless I have Christmas in Minnesota with my family, but this Christmas was at the top of my list. It was mostly private, though shared with people we care for deeply and Neil and I got a chance to spend a whole heap of quality time together.

Oh, and Neil’s gift to me?

He knew just what I wanted! I plan on adding others to the collection soon.
