Okay, there’s something you might not know about Neil and I. We game. Not football, or frisbee, or soccer or baseball, …computer games. I definitely never saw myself ever becoming a gamer. I’ve always been more of a movie nerd, or a memorizer of useless trivia. But as weird as it is to say, gaming changed my life.

I first stumbled into it when Neil and I started dating (3 hours long-distance). He’d bring his laptop up on his visits and while I worked on design projects or things for school, he’d plug in and play battlegrounds in World of Warcraft or missions in his latest first-person shooter game.

I was fascinated, especially by World of Warcraft or “WoW.” Unlike the Nintendo games I played as a kid, World of Warcraft was an MMO, a Massively Multiplayer Online Game, meaning you play with other people and the game is never the same each time you log in. It’s even dare I say…a little quirky? You can learn recipes, cook, make potions, and leatherwork. You can even buy and sell at auctions, own pets, and dance!

In no time Neil had built me a computer and we were playing WoW during the week when we were apart. I joined his guild and immediately had a built in social network of other players doing the same thing I was.

The latest World of Warcraft Expansion, Cataclysm.

Soon my roommate (both my best friend and ex-boyfriend Blake) was playing and we’d have full-blown gaming nights where we’d cook good food and yell game strategy back and forth across the apartment until we fell asleep. When Neil and I moved out, the gaming nights became more infrequent, but Neil and I still designate Friday as a no work at-home date night where we play WoW and try out new recipes.

We all still get together to celebrate expansion releases, and when WoW released Cataclysm last Tuesday we made plans to level our characters together on Friday night. We made Macaroni and Cheese with Pancetta from scratch and for a bit of game night nostalgia, Mini Pigs in a Blanket. This is only the second time we’ve made a traditional macaroni and cheese, with the full roux preparation, etc. Typically we healthify our mac and cheese with a lot of the substitutions you guys are used to seeing from us. But this was Game Night, so I decided to go full-on macaroni and cheese HO!

Ingredients:

8 tablespoons (1 stick) butter, divided
4 ounces thinly sliced pancetta, coarsely chopped
1 cup finely chopped yellow onion
1 teaspoon dried crushed red pepper
1 garlic clove, minced
1/4 cup all purpose flour
3 1/2 cups (or more) 1% milk
2 1/2 cups coarsely grated sharp cheddar cheese
1 cup finely grated Parmesan cheese
1 8-8.8-ounce container mascarpone cheese
1 1/2 cups panko or toasted breadcrumbs
1/2 cup chopped fresh Italian parsley
1 pound orecchiette or large elbow macaroni, prepared according to instructions

Directions:

1. Begin by slicing onion and pancetta and mincing garlic.

2. Melt 1 tablespoon butter in large deep skillet over medium-high heat. Add pancetta and sauté until crisp, about 6 minutes. Add onion and sauté until tender, about 5 minutes. Add crushed red pepper and garlic and stir for an additional minute.

5. Stir in 3 tablespoons butter; allow to melt, then slowly add flour and stir again for 1 minute. Gradually whisk in 3 1/2 cups milk (I say gradually because you might need less!) and simmer until thick enough to coat spoon, continuing to stir frequently, for about 5 minutes.

6. Remove sauce from heat. Whisk in cheeses and additional milk by 1/4 cupfuls until sauce is thick but pourable. Season with salt and pepper.

7. Mix thoroughly with noodles in large bowl and set aside.

8. Melt 4 tablespoons of butter in large nonstick skillet over medium-high heat. Add panko (or breadcrumbs of your choosing) and stir until very lightly golden, about 5 minutes. Remove from heat and stir in parsley.

9. Transfer noodles and cheese into a lightly buttered or sprayed 13x9x2-inch glass baking dish. Sprinkle crumb mixture over the top of the noodles evenly. Bake at 350°F until mac and cheese is heated through and topping is golden brown, around 30 minutes.

Perfect for cold nights when the thought of going outside makes you eat enough to render yourself immovable! I also made some miniature pigs in a blanket as a side. They’re an easy appetizer to keep around during the holidays if you know you might have visitors of the child-kind.

We had a blast leveling our characters until around 2 a.m. when I finally passed out and the boys continued playing Gran Turismo 5. What do we think of Cataclysm so far? Vashj’ir is a tedious place to level and we can’t wait to get back on dry land!

I’m not a pessimist. A lot of amazing and wonderful things happened this decade, but overall, I’m glad to be through it and excited because the next decade holds not only a lot of promise, but a lot of big changes and momentum in our lives.

A few of the great memories from 2009:


February 2009: 100 Acre-Wood Rally near Salem, MO. It was freeeeeezing but definately one of my best memories of the decade as a whole. We thought google directions were the most reliable to get us to the different viewing areas, and they were…because we ended up on the course!

April 2009: Neil returned to PDX and performed better than ever!

May 2009: We moved into our new-to-us house! Our first home as a married couple, and the place of many firsts. It’s our sanctuary and I couldn’t imagine living anywhere else for the time being.

June 2009: Neil’s Bachelor Party. There are tales of infamy from that night and I’m only glad my husband-to-be escaped unscathed and disease free.

July 2009: My bachelorette. Never ever let your waiter from dinner (center) offer to take you around town. Never ever let him suggest a bar comprised of disco balls and mirrors where they serve shots called the “bear f*%$&#” after you’ve spent all afternoon downing beer and the five bottles of champagne your bff brought to the hotel room. Never ever let any of this happen unless you want to have one of the most awesomely memorable nights of your life.

July 25, 2009: We got married. I felt married to him from the moment we became a couple, but now everyone and the government knows.

August 2009: Our honeymoon in Colorado. Best trip of our lives so far. So peaceful, so quiet, so relaxed and I personally never thought myself capable of, which speaks a lot to Neil’s influence and support. I climbed real mountains, slept in campsites without full-service bathrooms and electrical hookups and only showered twice that whole week.

September 2009: The only thing better than our honeymoon was that we were able to return to Colorado a month later to watch these two lovebirds tie the knot and capture it with our new Nikon D90.

October 2009: Halloween in Springfield with the gang. Neil was Vince the Sham-Wow guy and I was Billy Mays, or as every other drunk ass exclaimed “look a hobo!” I was not a hobo, it’s just really hard for a girl to pull off that steel-jawed bearded face.

November 11, 2009: My grandma passed away. And although we miss her dearly and wish she was here every second of every day to guide our ships like she always did, we’re excited for the many things yet to come that we know she’ll still be watching.

November 25, 2009: Great Family Thanksgiving. Couldn’t ask for a better week or a better family.

December 2009: Our first married Christmas, spent snowed out of Minnesota and Iowa and stuck at home. We compensated well though.

Other highlights:

  • I turned 27 and Neil turned 28.
  • We had an awesome wedding and bridal shower.
  • We bought a lot of camping equipment.
  • I took up yoga, Neil is back into running and we love the gym.
  • We started our LLC and this blog and have met tons of new people we enjoy chatting with.
  • We grew our first garden and learned to can and preserve all the goodies.
  • Played lots of World of Warcraft!

So there you have it. A year full of events and constant preparation for the next step or the next event. I’m excited for 2010, there are lots of things we want to do and I won’t have to spend half my year worrying about one day. I want to thank you all for supporting us, and reading this blog and I hope to  keep making it worth your while. Our first Christmas as a married couple was quite eventful yet very relaxing. We were in definite need of a vacation, so much so that by mid-week we often forgot what time it was and even what day it was. What started as plans to visit my extended family in Minnesota, ended in being snowed out of the upper Midwest by a wallop of a blizzard that dumped over a foot of snow in parts of Minnesota and ice throughout Iowa. We watched the radar for four hours before canceling our trip and calling our family.

It goes without saying that we were hugely bummed not to be able to take the trip. We decided to cheer ourselves up by planning a Christmas feast with our own micro-assortment of all our favorite dishes and a new one to acquaint ourselves with. We picked up a lovely ham, asparagus, potatoes, and ingredients for pineapple casserole, something I saw once on TV and have always wanted to try.

We spent much of the week reading books, watching movies and playing World of Warcraft. On the afternoon before Christmas Eve, we received a call from my uncle saying that my cousin’s wife had given birth to her twins. They were due in February but decided to make an early Christmas appearance, ironically on the same day as the oldest great-grandchild in our family, Andrew. That means that half of my grandparent’s great-grandchildren have the same birthday. Very easy to remember.

On Christmas Eve we spent the evening at Paul and Donna Moessner’s hanging out with Donna, Anja and Steve. We had great food and endless conversation while waiting for the 11p.m. church service at St. Andrew’s (Paul serves as pastor there). It was our first time worshipping at a Lutheran Church, but it wasn’t all that different than attending a Catholic mass, and there was even more music. Donna gave us a beautiful ornament of the Nativity for our tree.

On Christmas Day we awoke to a very white Christmas. It was very beautiful but quickly dashed any travel plans so we decided to prepare our feast. Lovely baked ham, sour-cream mashed potatoes, asparagus in olive oil and pineapple casserole. Very traditional given the way we normally cook, but it’s a once-a-year affair.

Our entertainment

The story of behind our entertainment. Felix is obsessed with boxes. The day before this we were unable to successfully capture him trying to squeeze himself in a standard USPS mailing box. You know, the skinny ones that are a little longer than a shoe box. In this picture he is trying to squeeze himself into the Yoga Mat box, because Neil had him convinced there was something in there. And no inch of box can go unexplored in the world of Felix.

It was a great Christmas despite the change of plans. To me, a little piece of my heart is never fulfilled unless I have Christmas in Minnesota with my family, but this Christmas was at the top of my list. It was mostly private, though shared with people we care for deeply and Neil and I got a chance to spend a whole heap of quality time together.

Oh, and Neil’s gift to me?

He knew just what I wanted! I plan on adding others to the collection soon.
