Not according to plan…

I can’t believe it’s Monday already. This weekend flew by, and it was nothing like we thought it’d be. As such, I didn’t have my camera with me at any point. We entered Friday night ready for a laid-back night at home, but got a call and ended up staying out late and hanging out with friends at Broadway Brewery, a local place downtown. No pictures, but gosh we love that place. There really is a difference between food that is merely assembled and food that is thoughtfully done with care. Everything we try is amazing, and they have so much fun with their menu. And of course, the beers and ciders are always good. I really can’t say enough good things.

On Saturday, we cleaned up the house and prepared for the arrival of Rachel and Luke. Rach and I were scheduled to do a 5k on Sunday, and she and Luke were going to come up and hang with us at the Mizzou Tailgate and then find some place to chill out for the night. Unfortunately (or fortunately?), right as they were packing the car, two puppies wandered into their yard. Random right? So Rach, being the absolute pup-lover that she is, opted to stay in Springfield to figure things out, while Neil and I headed to the tailgate alone. We of course, couldn’t go without some good snacks…

Neil put together bacon-wrapped sausages, brushed with coconut sugar and baked. He called them “meat candy.” They really were like candy, and disappeared pretty quickly from the table.

I put together a peach pie energy bite recipe I’ve been working on. I think I finally have it the way I want it, so I’ll have to share that soon.

We also picked up some festive seasonal beer. I’m on a mission to try as many pumpkin and Oktoberfest varieties as possible this fall. So far I’ve had the Arcadia Jaw-Jacker and Schlafly Pumpkin Ale. Both are good, but I’m a little partial to the Schlafly, which I think has a warmer spice to it.

Then our night took a complete 90-degree turn. We were headed back to our car to head home when I received a call from my friend Erica. She had a ticket to the game. I almost never get to go to games, so I was pretty excited. While Neil headed home to join friends for computer games (his favorite pastime), I treated myself to a soda and gummies and enjoyed some amazing seats in the 10th row. It was such a blast. The stadium was packed and the game was a good one, very close right down to the end.

I didn’t get home till around 10, and then Neil and I stayed up watching episodes of Workaholics. He had spent all night gaming, and neither of us were really that tired. I still wanted to run the 5k, but I just wasn’t feeling it. The idea of spending more time getting to the event than actually running it, and doing it alone, just didn’t seem worth the effort when I could run a more enjoyable out-and-back at home. So that’s what I did. I’m really trying to pump up my running now that the temps are fixed in the 70′s. It’s amazing how much easier running is when it’s not 105 degrees outside!

I had a bittersweet happy hour with my coworkers girlfriends after work last night. We had originally planned the occasion to celebrate my fellow designer Ashley’s wedding in a few weeks, and we did, but with my last day being tomorrow and Ashley announcing this week that she is moving to New York, it kind of felt like a very abrupt going-away party.

She’s going to keep working for Mizzou Online from New York and I’ll be here in Columbia but working for a different company. It’s all so surreal right now. I won’t pull out any Ferris Bueller quotes, but this huge amount of change is turning my stomach in knots. Since we’ll both be working from home, we’re going take your advice and set schedules with one another to talk and work collaboratively to avoid feeling alone and isolated.

I hope I can keep the friendships and connections I’ve made not only in the last year, but the last seven years. I have been fortunate to work with so many amazing people, and gain so many true friendships from work, that I’ve never really had to create a real social life outside of my career. I’m both proud and kind of embarrassed to admit that. I can’t wait to see where the next year takes my life, I’m ready for some adventure!

Don’t let his “caught off-guard” look fool you, until this weekend Neil had been chomping at the bit to barbecue at the new house since well before we moved in. Weeks before closing he was already plotting where the grill would go and what we were going to make for our first bbq. He’s already eyeing new grills and more permanent fixtures for the deck, but for the time being, he’s happy to have meat, cooked over fire, and in his stomach.

He was so excited to grill in fact that he went a little crazy at the meat market. I’ve told you about Neil’s love for our local Mizzou Meat Market before, so it was no surprise that he came home on Friday with a little bit of everything. Steak, pork chops (which we froze for later), bratwurst, and his favorite beef jerky. We had some chicken breasts in the fridge to use up from salads earlier in the week, so we threw those on as well knowing we’d be eating more salad this week.

Here are the cooked brats. They are by far and away the best brats I have ever tasted, and I’m typically pretty picky. Fresh and super juicy with the perfect balance of spice and creamy cheese. Heaven!

The steaks were huge! I feel like we ate tons of steak but still didn’t get through even half of it. We prepped them with simple salt and pepper. Amazing how little good steaks need to be just right.

The neighbors were getting jealous of all the good smells emanating from our deck. Poor pups!

Asparagus

I also decided to make a few sides, because unless you are Dennis Leary, meat in our house has to have some kind of vegetable to accompany it. I whipped up some easy grilled asparagus (asparagus drizzled with garlic, olive oil, sea salt and a little parmesan) and a lemon potato salad that Neil proclaimed as his new favorite.

Ingredients:

2 pounds small red potatoes
2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/2 cup Greek yogurt
1/3 cup light mayonnaise
1/4 cup chopped fresh dill
2 teaspoons thyme
1-2 teaspoons grated lemon peel

Directions:

1. Cover potatoes with salted cold water by 1 inch and bring to a boil, then reduce heat and simmer, uncovered, until potatoes are tender, 15 to 20 minutes. Drain potatoes in a colander.
2. When potatoes cool enough to handle, quarter, then toss with lemon juice and salt in a large bowl.
3. Whisk together greek yogurt, mayonnaise, dill, thyme and grated lemon peel in a bowl until blended. Whisk in additional salt (and pepper, if desired) to taste, then add to potatoes and toss to coat. Serve warm or cool after refrigerating.

I love potato salad because it’s so effortless. I probably went a little overboard with the Greek yogurt, but I just can’t get enough of the stuff and a little extra is never a bad thing right? The citrus is the perfect compliment to a creamy potato salad and almost makes it taste a little like a dessert. We’ve been eating tons of fruit and vegetables lately. The brief summer window of pure produce smorgasbord seems so brief doesn’t it? I feel like I’m constantly preserving and freezing, hoping to bottle a piece of summer to have year-round. Maybe it’s time to think about a little deep freezer?
