Meal Planning: 9/9-9/15

We’re nearing the end of our second week of concerted efforts toward better meal planning and so far, things are mostly good. We’ve been a little more swamped than normal with work, which has resulted in some pretty late dinners, but have stuck to the plan and have saved what little is left of our evenings by not having to scramble to put together meals at the last-minute.

Our Plan:

Breakfasts and Lunches: Same as last week
Monday-Tuesday: Meatballs + spaghetti squash (we subbed sausage for quinoa)
Wednesday: Oven-roasted Thai Chicken
Thursday-Friday: Chicken Enchiladas
Fun treat: Pumpkin Oatmeal Raisin Cookies

We’ve pretty well solidified Sunday as our shopping and prep day. It’s typically fairly open and the last possible moment before the week begins. This week we added the lengthy task of canning to our prep schedule. With the late summer heat we are finally seeing a bumper crop of tomatoes from our garden and peppers from my parents’. Neil also received a bag of tomatoes from a coworker, so Sunday ended up being the “use it or lose it” day. Two dozen pint jars later, we now have enough marinara and pickled peppers to get us through the winter. Anyway, back to this meal plan.

I designed this week to be efficient, but focus on some skills (am I sounding too much like a coach?). Erica is somewhat new to working with meat, so I planned an easy batch of meatballs with spaghetti squash or pasta meal for two days, than a whole roasted chicken to eat plain one day and make into enchiladas for the second and third days. Again, mostly Paleo, but all healthy. So here’s this week:

Surprisingly, the meatballs went much farther than I thought they would, feeding us for three meals!

Unfortunately the cookies only lasted a day and a half.

Hmmmm....

The chicken ended up being roasted late Wednesday night, and eaten on Thursday and into this weekend in enchiladas.

I forgot to collect and inventory all the ingredients, but I’ll try to get back on track next week. For now, enjoy this amazing picture of Felix we caught during prep. Competition training is kicking my ass, but I love it!
